Cajun Asparagus in Brown Butter Sauce

With the sous vide and steam function in the Anova Precision Oven, you will never end up with overcooked asparagus again. Using this method of cooking locks in moisture and cooks the asparagus quickly. Removing the spears from the oven while it comes up to a higher temperature for roasting ensures that the asparagus comes out perfectly seared and crunchy. Note: If you are not a fan of capers, you can omit them without fundamentally changing the recipe. Similarly, if you would prefer a dish with more subtle flavors, cut back on the lemon juice by half. This dish would be perfect as a side dish served alongside roasted salmon or chicken.

Cajun Asparagus in Brown Butter Sauce

Ingredients
1 pound (450g)
large asparagus spears, trimmed
1 clove
garlic, minced
3 Tbsp
unsalted butter
2 Tbsp
capers, rinsed and patted dry
1 Tbsp
fresh lemon juice
1 Tbsp
extra-virgin olive oil
1 tsp
Cajun seasoning, such as Tony Chachere's, plus more to taste

1. Preheat the Oven and Prepare Pan

Line a sheet pan with aluminum foil.

Temp: 200°F
Heat: Rear

2. Sous Vide Asparagus

Rack
Place asparagus on the prepared pan and transfer to the oven on the middle rack. (At this stage, no oil or seasoning is required.) Cook until tender, 7 minutes.

3. Make Sauce

Meanwhile, melt the butter in a 10-inch skillet over medium heat. Continue to cook until the butter begins to brown and smell nutty, 3 to 5 minutes. Add the capers and garlic to the browned butter and cook until capers have burst open slightly, an additional 1 to 2 minutes. Add the lemon juice and remove the pan from heat.

4. Adjust the Oven for Browning

Rack
Remove the asparagus from the oven and adjust the settings for browning. Drizzle the asparagus with the olive oil and sprinkle it with the Cajun seasoning. Toss to make sure the vegetables are well coated.

5. Brown Asparagus

Return the asparagus to the oven on the highest rack position and cook until browned, about 4 minutes.

6. Sauce and Serve

Once asparagus has finished cooking, pour the brown butter sauce on top. Taste and adjust seasoning as needed. Serve immediately.
