Vegan Tofu Pot Pie

This tofu pot pie is a vegan twist on a classic all-American comfort food! It’s filled with veggies mixed in creamy “gravy” and pairs wonderfully with the delicious, golden, and buttery vegan pie crust. Thanks to the Anova Precision Oven’s dry heat setting, the veggies are perfectly tender while the crust is wonderfully golden and crisp on the outside and soft on the inside!

Ingredients
3 cup
All purpose flour
⅓ cup
Olive oil
1 tsp
Salt
3 tsp
Baking powder
1 cup
Almond milk
1 cup
Chopped carrots
1 cup
Peas
1 cup
Mushrooms
1.5 cup
Vegetable Broth
½ cup
Vegan butter
½ cup
Onions
⅓ cup
All purpose flour
1 cup
Diced Tofu
Steps

1. Preheat Oven

Rack
Sous Vide Mode: Off
Steam: Off
Temp: 350°F
Heat: Rear

2. Mix Pie Crust Ingredients

In a large mixing bowl, mix the almond milk and olive oil together. Then, add baking soda and salt and whisk.

3. Add Flour & Knead

Add flour & mix until the dough forms and you can no longer whisk. Then, with dough still in the bowl, use your hands to fold and knead the dough about 8 times until it forms a semi firm mound. Cover the bowl and set aside for 10 minutes.

4. Cook Vegetables

Heat a large pot on the stove to medium high, add 1/3 cup butter and melt. Once melted, add onions. Cook for 2-3 minutes. Then, add remaining vegetables and cook for 5 minutes stirring frequently.

5. Add Broth

Add vegetable broth and season with salt and pepper. Bring to a boil.

6. Add Flour

Once the pot has reached a boil, remove it from the heat and quickly whisk in flour. Make sure all of the lumps are out.

7. Roll Dough to Make Pie Crust

On a floured surface, cut the ball of dough in half and roll each half into a 1/4 inch “crust” to fit the dish you’ll be baking the pie in (9 inch round or 9x11 rectangular).

8. Add Crust & Filling

Add the first sheet of crust to the baking dish and use your fingers to press down and make sure it covers all the edges. Then, Pour the entire contents of your pot of filling into the crust lined baking dish. Top with the tofu and mix in.

9. Cover the Pie

Top the dish with your second sheet of crust and make sure that it folds over the top of the dish. Use a fork to press down the ridges and then use the fork or a knife to poke air holes into the pie.

10. Bake for 35 minutes

Bake in the Oven for 35 minutes until the crust is golden brown.
