These easy fish sticks are crispy on the outside and tender on the inside. They make a perfect appetizer or speedy dinner. Thanks to the convection function of the Anova Precision Oven, the fish sticks cook evenly and quickly. My kids absolutely love this dish!

Ingredients
1 lb
skinless firm, white fish fillets, such as tilapia
¾ tsp
salt, divided
¼ tsp
black pepper, divided
1 cup
buttermilk
1 cup
panko breadcrumbs
½ cup
all-purpose flour
1 tsp
paprika
1 tsp
garlic powder
1 tsp
onion powder
3 Tbsp
unsalted butter, melted
Steps
1. Prepare Fish
Slice the fish into 1-inch-thick strips.
2. Season
In a large bowl, gently toss the fish with 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper.
3. Soak
Pour the buttermilk over the fish and move the strips around to ensure they are evenly coated. Let the fish soak in the buttermilk for 10 minutes.
4. Preheat the Oven and Prep Pan

Line a rimmed sheet pan with parchment paper or a silicone baking mat.

5. Make Breading
In a pie plate or shallow bowl, whisk together the breadcrumbs, flour, paprika, garlic powder, onion powder, and remaining salt and pepper.
6. Bread Fish
Remove a fish strip from the buttermilk and shake off excess. Place the fish strip into the breading and press the breading on the fish all around so it is fully coated. Transfer to the prepared pan. Repeat with the remaining fish.
7. Brush with Butter
Gently brush the fish sticks with the melted butter, being careful not to brush off the breading.
8. Bake
Rack
Transfer to the oven and bake until golden brown on top, about 10 minutes. Remove from the oven and gently flip. Brush with more melted butter, making sure to brush all the spots with visible white flour. Return to the oven to bake until golden brown on the second side, about 5 minutes.
