Steam-Baked Mixed Berry Clafoutis

Clafoutis is a cross between a custard and a pancake, and a very easy dessert or snack to whip up in the afternoon. It originates from France and is basically fruit topped with a sweetened batter. By using the Anova Precision Oven’s steam bake feature, this dessert is always evenly cooked with a moist, custardy center. This recipe calls for blueberries and blackberries, but feel free to use any fruit you’d like.

Ingredients
Softened butter, for greasing pan
¾ cup
whole milk
¾ cup
all-purpose flour
⅓ cup
granulated sugar
3 large
eggs
1 tsp
vanilla extract
⅛ tsp
fine salt
1.5 cups
blueberries
1.5 cups
blackberries
Powdered sugar, for serving
Steps

1. Preheat Oven

Steam: 50%
Temp: 350°F
Heat: Rear

2. Prep Pan

Use butter to grease a 9-inch baking dish, skillet, or any other similar-sized ovenproof pan.

3. Prepare Batter

In a blender, combine the milk, flour, sugar, eggs, vanilla, and salt. Blend until just evenly combined; be careful not to overwork. Alternatively, whisk all batter ingredients together in a large bowl.

4. Assemble

Pour a third of the batter in the bottom of a greased baking dish. Layer half of the berries into the dish, and then pour another third of the batter to cover. Place another layer of berries on top and cover with remaining batter.

Rack
Transfer to the oven and bake until browned and puffy, 30 to 35 minutes. (Cook time depends on the depth of the pan.)

6. Cool and Serve

Let rest for about 15 minutes before sprinkling with powdered sugar and serving warm. (It will sink as it cools.) You can also serve this dish with whipped cream or ice cream.
