Fondant Sweet Potatoes with Lemon Tzatziki

Sometimes called "melting potatoes,” fondant potatoes are soft, decadent, and they practically melt in the center. They’re usually made by searing on the stovetop and then finished in a pool of broth in the oven. By using the Anova Precision Oven, you can accomplish all of this without the use of your stove and without a pool of broth! The end result is soft, luscious sweet potato flavored with spicy harissa and sweet black garlic, and served with a cooling lemon tzatziki. This dish makes a great small plate/appetizer, side dish, or addition to any family-style meal. Note: For best results, choose medium sweet potatoes with a long, straight shape.

Fondant Sweet Potatoes with Lemon Tzatziki

Ingredients

cucumber, peeled and grated
12 oz
plain Greek Yogurt
1 Tbsp
chopped fresh dill
1 Tbsp
fresh lemon juice
1 Tbsp
garlic powder
Kosher salt

sweet potatoes (see note)
2 Tbsp
extra-virgin olive oil
1 Tbsp
harissa spice blend
1 Tbsp
black garlic powder
Steps

1. Preheat Oven and Pan

Rack
Place a sheet pan in the oven before turning it on. Let the oven heat for at least 20 minutes; remember, you are also heating the pan.

Temp: 400°F
Heat: Top, Bottom

2. Make Tzatziki

Place the grated cucumber in a paper towel or cheesecloth and squeeze over the sink as hard as possible to release water. Change angles once or twice and continue to squeeze the remainder of the water from the cucumber. Transfer to a cutting board, chop finely, then place in a medium bowl. Stir in the yogurt, dill, lemon juice, and garlic powder. Stir well and season to taste with salt. Refrigerate until ready to serve.

3. Shape and Cut Sweet Potatoes

Cut off the tips of the sweet potatoes and peel. I like to use a microplane to round off the edges and surface of the sweet potatoes, but this is optional. Next, cut each sweet potato into about 1/2-inch-thick discs.

4. Season Sweet Potatoes

In a large bowl, combine the sweet potatoes with the oil, harissa spice blend, and black garlic powder. Season generously with salt. Toss until all surfaces of the sweet potatoes are well coated.

5. Sear Sweet Potatoes

Carefully remove the pan from the oven and immediately place the sweet potatoes flat on the pan in a single layer. Place in the oven and cook for 5 minutes. Quickly and carefully flip the sweet potatoes, then continue to cook for 7 minutes, rotating the pan as you return it to the oven.

6. Finish with Steam

Adjust the oven settings and cook until the potatoes are tender, about 10 minutes.

7. Plate and Serve

Plate the sweet potatoes with the tzatziki and garnish as desired. I like to use dill, Thai basil, pepitas and dried chili threads. Enjoy!
