Ingredients
For the Garlic Confit
2 cups
extra-virgin olive oil
8 oz to 1 lb
peeled garlic cloves
1 sprig
fresh rosemary
For the Bread
1.5 cups
freshly grated Parmesan cheese, divided
2 sticks (8 oz)
unsalted butter, at room temperature
6 to 8 cloves
Garlic Confit (above)
2 Tbsp
chopped fresh basil or parsley
1 Tbsp
Italian seasoning
1.5 cups
freshly shredded low-moisture mozzarella cheese
1 loaf
French bread, halved lengthwise
Marinara sauce, for serving
Steps

1. Preheat the Oven

Temp: 225°F
Heat: Rear

2. Prepare the Garlic Confit

Rack
Combine the oil, garlic, and rosemary in an 8-inch baking dish. Transfer to the oven and cook until the garlic is very soft, about 1 hour. Remove from the oven and let cool in the oil. Use a slotted spoon to scoop out 6 to 8 cloves for the garlic bread. Refrigerate the remaining confit for up to two weeks.

3. Adjust the Oven for the Bread

4. Prepare the Garlic Butter

Combine ½ cup of the Parmesan with the butter, garlic confit, basil, and Italian seasoning in a medium bowl. Use a fork to stir and mash until you’ve got a cohesive compound butter. In a second medium bowl, mix together the mozzarella and remaining Parmesan.

5. Assemble the Bread

Spread the garlic butter on both sides of the bread. Top with the cheese mixture.

6. Broil the Bread

Transfer directly to the oven rack and cook until the cheese is melted and browned, 5 to 7 minutes.

Transfer to a cutting board and let rest for 5 minutes. Slice and serve with marinara sauce for dipping.
