This simple, easy, and flavorful pepper steak recipe is great for any weeknight meal. The Anova Precision Oven’s sous vide mode helps keep the flank steak very tender.

Ingredients
1 (2-lb)
flank steak
¼ cup
soy sauce
2 Tbsp
rice wine vinegar
1 Tbsp
oyster sauce
1 Tbsp
cornstarch
2 to 6 cloves
garlic, grated
1.5 tsp
sesame oil
1 tsp
grated fresh ginger
1 tsp
brown sugar, plus more to taste
½ to 1 ½ tsp
freshly ground black pepper

Cooked rice, for serving

1. Preheat the Oven

Temp: 135°F
Heat: Rear

2. Sous Vide Steak

Rack
Place the steak on a rimmed sheet pan. Transfer to the oven and cook for 4 hours. Remove from the oven.

3. Adjust the Oven for the Second Cook

4. Make Sauce

Meanwhile, whisk together the soy sauce, vinegar, oyster sauce, cornstarch, garlic, sesame oil, ginger, brown sugar, and black pepper in a large bowl until smooth. Season to taste with salt and additional brown sugar.

5. Slice Steak

Slice the steak into thin strips across the grain. Try not to cut the steak too thin — if it is too thin, the steak will fall apart.

6. Toss with Sauce

Transfer the steak to the bowl with the sauce and add both peppers. Stir well and spread in an even layer on the sheet pan.

7. Second Cook

Rack
Place the steak and peppers in the oven and cook until the peppers are crisp-tender, 5 to 7 minutes.
