These aren’t the dry pork chops from your childhood! With the Anova Precision Oven’s sous vide mode and 100% steam, you’re guaranteed a tender and juicy pork chop every time. This makes it easy to make pork chops for a group. You can also modify the recipe by adding seasonings before placing in the oven, or add aromatic herbs, such as rosemary, to the pan when searing.

Ingredients
2 thick-cut
pork chops (either bone-in or boneless)
1.5 tsp
kosher salt, plus more for serving if desired
Freshly ground black pepper
1 Tbsp
unsalted butter
1 tsp
extra-virgin olive oil
Steps

1. Preheat the Oven

Rack
Sous Vide Mode: On
Steam: 100%
Temp: 144°F
Heat: Rear

2. Season Chops

Season both sides of the pork chops with salt and pepper (see note). Insert the probe into the thickest part of the thickest pork chop, taking care to avoid the bone.

3. Cook

Rack
Transfer to the oven, attach the probe, and cook until the probe reaches its target temperature, about 1 hour.

Steam: 100%
Temp: 144°F
Heat: Rear

4. Dry

Remove the chops from the oven and remove the probe. Pat very dry with paper towels. Meanwhile, heat the butter and oil in a cast iron skillet over medium-high heat.

5. Sear

Add the dried chops to the hot skillet and sear until golden brown, about 2 minutes per side (see note).

6. Slice and Serve

Transfer to a cutting board, slice, and serve with additional salt, if desired.
