Sweet and Spicy Sticky Wings

As far as I’m concerned, sweet and spicy sticky wings are far superior to any other style of chicken wing. In addition to this undeniable flavor combination, these wings are also sufficiently salty with a nice acidic balance thanks to fresh lime juice. And the Anova Precision Oven makes it quick and easy to get wings that are slightly crispy, perfectly sticky, and not at all dry. This recipe doesn’t require too much active time — two cook stages totaling 30 minutes — but you do need to plan for a few extra hours to marinate the wings before they go in the oven.  Note: After further testing, this recipe has been updated to reduce the glaze on the stovetop before using, remove the parchment paper, and increase the final cooking time.

Ingredients
¼ cup
extra-virgin olive oil
¼ cup
soy sauce, divided
4
garlic cloves, minced, divided
1 (2-inch) piece
fresh ginger, peeled and minced, divided
1 tsp
kosher salt
½ tsp
freshly ground black pepper

chili garlic sauce, such as sambal oelek
Steps

1. Prepare Marinade

Whisk together the oil, 2 tablespoons soy sauce, half of the garlic, half of the ginger, and the salt and pepper in a medium bowl.

2. Marinate Wings

Place the wings and the marinade in a gallon-sized zipper-lock bag and massage from the outside to coat the wings. Seal, removing as much air as possible, and refrigerate for at least 2 hours or up to 4 hours.

3. Preheat the Oven

Place the wings in a single layer on a rimmed sheet pan. Transfer to the oven and cook for 20 minutes.

5. Prepare Glaze

While the wings cook, combine the remaining soy sauce, remaining garlic, remaining ginger, honey, lime juice, and chili garlic sauce in a food processor or blender. Process until smooth. Transfer to a medium saucepan and bring to a simmer over medium heat. Continue to simmer until the glaze has reduced from 3/4 cup to 1/2 cup, 7 to 10 minutes. Remove from the heat.

6. Adjust Oven for Browning

Remove the wings from the oven before adjusting the settings.

7. Glaze Wings

Transfer the wings to a large bowl and pour off any liquid accumulated on the sheet tray. Add about 2/3 of the glaze to the wings and toss to coat. Return the wings to the pan.

8. Brown

Return the wings to the oven and cook until browned and caramelized, about 10 minutes.

9. Glaze Again and Serve

Return the wings to the large bowl and toss with the remaining glaze. Transfer to a platter and serve immediately.
