The Anova Precision Oven roasts and steams the acorn squash at the same time, creating a soft interior and crispy exterior. It’s a perfect side dish or snack.

Steam-Baked Garlic and Parmesan Acorn Squash

Ingredients
⅓ cup
shredded Parmesan cheese
1 tsp
garlic powder
½ tsp
onion powder
½ tsp
salt
½ tsp
freshly ground black pepper

large acorn squash
3 Tbsp
unsalted butter, melted
Steps

1. Preheat Oven

Sous Vide Mode: Off
Steam: 25%
Temp: 400°F
Heat: Rear

2. Prepare Coating

In a large bowl, combine the Parmesan, garlic powder, onion powder, salt, and pepper. Stir with a spoon to mix ingredients evenly. Set aside.

3. Cut Squash

Cut acorn squash in half and scoop out the seeds.

4. Slice Squash

Slice each half into 1/2-inch-thick slices.

5. Add Squash to Pan

Place sliced acorn squash on a foil-lined baking sheet.

6. Brush Squash with Butter

Use a brush or spoon to coat both sides of acorn squash slices with the melted butter.

7. Coat Squash with Garlic Parmesan

Place each buttered slice of acorn squash in the bowl with the coating and toss to make sure slices are fully coated. Return them to the foil-lined pan in an even layer.

8. Bake

Rack
Place tray of coated squash in the oven and bake until squash is tender and Parmesan coating is lightly browned and crisp.

9. Serve

Let the acorn squash cool for about 2 minutes before serving warm. Enjoy!
