Very easy cupcakes made in the Anova Oven using steam to help make the cupcakes moist. This is for the beginner baker or someone who wants a quick dessert without all of the measuring, shifting and mixing of the ingredients. The frosting is very light and fluffy with a pudding like texture. Use a different frosting of your choice if you don’t like this type of textured frosting. You can also substitute other pudding flavors in this frosting if you do not want to use pistachio pudding mix.

Ingredients

Box of White Cake Mix (15.25 oz Box)
½ cup
Unsalted Pistachios (with no shells)

Boxes of Instant Pistachio Pudding Mix (3.4 oz boxes)
⅓ cup
Melted Butter
4
Large Eggs
2 cups
Milk
1 tsp
Pure Vanilla Extract
1.5 tsp
Pure Almond Extract

Packet Dream Whip
Additional Pistachios for Garnish
Steps

1. Gather Ingredients

Gather ingredients for the cupcakes.

2. Grind Pistachios

Grind pistachios in food processor or blender until pistachios are now fine crumbs.

3. Mix Dry Ingredients

In large mixing bowl mix cake mix, ground pistachios, pudding mix until well combined.

4. Mix Wet Ingredients

In a large mixing bowl - Mix 1 cup of milk, butter, extracts, eggs together until well combined.

5. Combine Dry & Wet Ingredients

Combine the wet and dry ingredients just until combined making sure not to over mix the batter. The batter will be fluffy.

6. Fill Cupcake Pan

Line cupcake/muffin pan with cupcake liners, spray the liners with baking spray (this helps ensure cupcakes do not stick). Then fill each cupcake holder 3/4 full.

7. Preheat Oven

Rack
Sous Vide Mode: Off
Steam: 15%
Temp: 350°F
Heat: Rear

8. Cook Cupcakes

Rack
Cook Cupcakes for 18 minutes or until the toothpick comes out clean when inserted into cupcake. After cupcakes cook, remove cupcakes from oven and let them cook completely.

Steam: 15%
Temp: 350°F
Heat: Rear

9. Make Frosting

In large mixing bowl- mix Dream whip, pistachio pudding, and one cup of milk until the mixture is fluffy.

10. Frost Cupcakes

After the cupcakes have cooled - frost cupcakes.

11. Serve

Garnish with crumbled pistachios. Serve.
