This recipe utilizes the Convection and the steam on the Anova Precision Oven to cook the Potatoes evenly and more quickly than a normal oven. This dish gets a perfect char on top and nice soft potatoes underneath cooked perfectly thanks to the Anova Precision Oven.

Steps
1. Pre-Heat Oven

Sous Vide Mode: Off
Steam: Off
Temp: 350°F
Heat: Rear
2. Lay Out Bacon
Lay out a half pound of bacon on to a sheet pan lined with parchment paper. Make sure bacn isnt crowded and is plced with soace in between each slice.
3. Cook Bacon
Rack
Cook bacon. Remove from heat and set aside.

Steam: Off
Temp: 350°F

4. Cut Bacon
Cut bacon in to small pieces.
5. Pre-Heat Oven

6. Slice Potatoes
Using a mandalin or sharp knife, carefully slice yukons in very thin slices. Soak in water to prevent browning on the potatoe.
7. Saute Onions and Garlic
Add 1 cup of small julienned onions to a pot with shaved or minced garlic, and butter. Saute on medium heat until well sweated.
8. Add Cream and Seasonings
Add cream, salt, and white pepper and simmer on low to medium heat for 5 minutes.
9. Add Swiss Cheese
And Swiss cheese and continue to simmer on low heat until Swiss cheese is completely melted into cream sauce. Taste and add more seasoning if needed.
10. Pour Cream Sauce
Pour a very thin layer on cream sauce on to the bottom of a pan sprayed muffin pan.
11. Add 1st Layer of Cheddar
Add a thin layer of cheddar cheese.
12. Add 1st Layer of Potatoes and Mozzarella
Dip 2 potatoe slices in cream sauce and place in mufin slot. Add a thin layer of mozzarella cheese on top of the potatoes.
13. Repeat and Fully Stack Potatoes
Repeat process alternating cheese each layer until you have about 3-4 layers of potatoes. Add a mix of cheddar and Swiss cheese on the very top.
14. Cook Potatoes Au Gratin
Rack
Place the potatoes in the oven on the middle rack. Place a drip pan or foil underneath the potatoes for cream overflow. Cook until cheese is charred on top and potatoes are fully cooked. Approximately 30 minutes.

15. Let Cool and Remove From Pan
Let cool cor approximately 15 minutes before trying to remove from pan. Carefully remove from pan with a butter knife or rubber spatula and place on to a serving plate. If potates fall apart and are to loose let them cool down longer.
16. Garnish and Serve
And a small spponful of sour cream on top of each potatoe. Garnish with bacon bits, chives, paprika, and parsley. Serve and enjoy.
