Lightened Up Artichoke Dip

A more flavorful, lower calorie, and lower fat version of traditional artichoke dip. This blend of smooth and chunky dip is perfect to spread onto bread or use veggies as dippers. Top with fresh lemon and herbs for a balanced, creamy appetizer. A great recipe for your Anova Precision Oven since the steam feature keeps the inside creamy!

Ingredients
16 oz
canned quartered artichoke hearts in water, drained
2 cloves
Garlic
½ cup
2% Greek Yogurt
4 oz
Neufchâtel Cheese
½ cup
Light Mayonnaise
8 oz
Frozen Spinach, thawed, squeezed dry and chopped
⅔ cup
Grated Parmesan cheese, divided
¾ tsp
Kosher salt
¼ tsp
Freshly Ground Black Pepper
⅛ tsp
Cayenne pepper

Lemon, for serving

Fresh chives, diced
1 small bunch
Fresh basil leaves

Steps

1. Preheat oven

Preheat oven to 350 F with 35% humidity.
Sous Vide Mode: Off
Steam: 35%
Temp: 350°F
Heat: Rear

2. Pureé wet ingredients.

Add half of the artichoke hearts, garlic, yogurt, Neufchâtel cheese, and mayonnaise to a food processor and pulse until smooth, scraping down the sides of the food processor as needed with a rubber spatula.

3. Transfer to a medium bowl.

Transfer pureé from food processor to a medium bowl.

4. Rough chop remaining artichokes.

On a cutting board, roughly chop the remaining artichoke hearts. Add to bowl with pureé.

5. Add remaining ingredients to bowl.

Add the remaining ingredients to the bowl and fold together until combined.

6. Spoon into oven safe container.

Spoon the dip into a roughly 8x8 oven safe baking dish and spread into an even layer.

7. Bake for 25 minutes.

8. Remove from oven and change settings.

Remove dip from oven, allow steam to escape and change settings to 0% steam with the top heating element.

9. Add remaining cheese and return to oven.

Add remaining cheese to top of dip and return to oven for five minutes until golden brown.
