Steam-Roasted Broccoli

Steam-roasted broccoli is on my dinner table at least two nights a week. It's fast, easy, and simple to customize to suit your tastes. By using a steam, a moderate oven temperature, and the convection fan, the broccoli florets turn tender in the center while also gaining a touch of char.

Ingredients
1 lb (450g)
broccoli, cut into 1 ½- to 2-inch florets
3 Tbsp
extra-virgin olive oil
¾ tsp
kosher salt
½
lemon
2 Tbsp
finely grated Parmesan cheese
Steps

1. Preheat the Oven

Rack
Sous Vide Mode: Off
Steam: 50%
Temp: 375°F
Heat: Rear

2. Prepare the Broccoli

Spread the broccoli in an even layer on a rimmed sheet pan. Drizzle with the olive oil, sprinkle with the salt, and toss to coat evenly.

3. Roast

Rack
Transfer to the oven and cook until the broccoli is tender and charred, about 10 minutes.
Sous Vide Mode: Off
Steam: 50%
Temp: 375°F
Heat: Rear

4. Serve

Squeeze the lemon over the broccoli and toss to coat. Sprinkle with the cheese and serve immediately.
