1 tsp
Diamond Crystal kosher salt
1 tsp
sugar
Ice cubes
Lemon wedges, for serving
Cocktail sauce, for serving
Steps
1. Preheat the Oven
Rack
Sous Vide Mode: Off
Steam: 100%
Temp: 212°F
Heat: Rear
2. Season Shrimp
Spread the shrimp in an even layer on a sheet pan. Sprinkle with the salt and sugar. Toss to coat.
3. Cook
Rack
Transfer to the oven and cook until pink and curled, 6 minutes.
While the shrimp cook, prepare an ice bath.
Sous Vide Mode: Off
Steam: 100%
Temp: 212°F
Heat: Rear

4. Chill
Immediately transfer the cooked shrimp to an ice bath. Let sit for 10 minutes to chill. Drain.
If desired, you can refrigerate the chilled shrimp for up to 24 hours in advance of serving.
5. Serve
Place the shrimp on an ice-filled platter. Serve with lemon and cocktail sauce.
