These crispy duck fat smashed potatoes have a crisp exterior and soft and tender interior thanks to a two-stage steam-then-roast cook in the Anova Precision Oven. The duck fat gives these potatoes a deliciously rich flavor, making them a perfect side dish for any meaty protein, such as prime rib or steak.

baby yellow potatoes
3 Tbsp
melted duck fat
1 Tbsp
minced fresh thyme
Kosher salt or fleur de sel
Freshly ground black pepper
Steps

1. Preheat Oven

Temp: 350°F
Heat: Rear

2. Prep Potatoes

Remove any debris and dirt from the potatoes. Transfer to a parchment- or silicone mat-lined sheet pan.

Transfer to the oven and steam until soft, about 30 minutes. (Cooking time depends on the size of the potatoes.)

5. Smash

Remove the potatoes from the oven. Use a fork or a potato masher to flatten the potatoes.

Drizzle the duck fat over the potatoes and sprinkle with the thyme. Season with salt and pepper.

Return the potatoes to the oven and cook for 10 minutes.
