The Anova Precision Oven makes these potatoes crispy on the outside with a soft texture on the inside. The duck fat also gives these potatoes a delicious rich taste. This side dish goes perfect with any meats.

Melted Duck Fat
1 Tbsp
Fresh Thyme Minced
Kosher Salt or Fleur De Sel Sea Salt

Steps

1. Clean Potatoes

Clean the potatoes removing any debris and dirt.

2. Place Potatoes On Baking Sheet.

Place potatoes on baking sheet lined with parchment paper or foil.

3. Preheat Oven

Steam: 100%
Temp: 350°F
Heat: Rear

4. Steam Potatoes

Place pan on the third row. Steam potatoes. Cook potatoes for about 30 minutes or until the potatoes are soft.

5. Smash Potatoes

Once the potaotes have cooked through flatten potatoes using a fork or potato masher.

6. Season Potatoes

Season the potatoes with the salt, pepper, thyme and duck fat.

8. Cook Potatoes

Place the potatoes back into the oven and cook the potatoes for 10 minutes.

10. Brown Potatoes
