Chicken breasts wrapped in prosciutto and stuffed with Boursin cheese over thyme and garlic infused burst cherry tomatoes. The Anova Precision Oven’s sous vide mode ensures perfectly cooked chicken breast every time and a quick switch to dry heat makes for a browned, crispy end product!

Prosciutto-Wrapped Boursin Stuffed Chicken

Ingredients

Chicken Breasts, boneless skinless
Salt & Pepper
½ tsp
Garlic Powder
1 container
Boursin Cheese (5.2 oz)
3 oz
Sliced Prosciutto (3 slices per chicken breast)
1 container
Cherry or other small variety tomatoes, about 10 oz
1 Tbsp
Olive Oil
2 cloves
Garlic, finely minced
4 sprigs
Fresh Thyme
Steps

1. Preheat Oven

Sous Vide Mode: On
Steam: 100%
Temp: 160°F
Heat: Rear

2. Prepare Chicken

Butterfly chicken and season both sides with salt, pepper & garlic powder.

3. Stuff Chicken

Spread an even layer of Boursin cheese on one side of the chicken, about half the container of Boursin per chicken breast.

4. Roll Chicken

Roll stuffed chicken into cylindrical shape.

5. Wrap Chicken

Wrap each chicken breast with three slices of prosciutto, covering as much of the outside of the chicken as evenly as you can.

6. Prepare to Cook

In a 10.25” or smaller cast iron pan or the baking tray pan add 10 oz cherry tomatoes, 1 tablespoon olive oil, 2 cloves of finely minced garlic, salt and pepper and a few sprigs of thyme. Mix well until everything is evenly coated. Nestle chicken among the cherry tomatoes.

7. Cook Chicken

Insert probe into chicken and place into preheated oven. Cook until probe registers 140°, about 45 minutes. Remove from oven.

8. Prepare for Broiling

Remove chicken from oven and preheat to broiling temp.

9. Broil Chicken

Once preheated, place chicken back into oven and broil until crisp and probe registers about160°, about 7 minutes.
