Epic Steam Oven Grilled Cheese

The Anova Precision Oven is a game changer for grilled cheese sandwiches. The combination of high heat and a little steam means the cheese is melty and the bread is both soft *and* crispy. On its own, this recipe is pretty epic with bacon and pepper jelly, but it’s really more of a base recipe with room for options. Sometimes we like to add kimchi and a fried egg, or even some candied jalapeños. Note: You can cook the bacon in the Anova Precision Oven, if you’d like. Follow the Bacon 101 recipe. Epic Steam Oven Grilled Cheese

Ingredients
4 Tbsp
salted butter, softened
4 slices
thick white sandwich bread
2 Tbsp
hot pepper jelly
1 cup
shredded Colby Jack cheese, divided
4 slices
cooked bacon (see note)
Steps

1. Preheat the Oven

Rack
Sous Vide Mode: Off
Steam: 40%
Temp: 400°F
Heat: Rear, Top

2. Butter Bread

Spread 1 tablespoon of butter on one side of each slice of bread.

3. Assemble Sandwiches

Place two slices of bread, butter-side down, on a parchment lined sheet pan. Top with the pepper jelly, then half of the cheese. Tear each slice of bacon in half and place them on top of the cheese. Top with the remaining cheese. Place the remaining slices of bread on top, butter-side up.

4. Cook

Rack
Transfer to the oven and cook, flipping halfway through, until the sandwich is browned and the cheese is melted, 8 to 10 minutes.

Steam: 40%
Temp: 400°F
Heat: Rear, Top

Let rest for a minute or two, then slice into triangles and serve.
