Make a creamy lemon garlic sauce with moist chicken breasts using the Anova Precision Oven. Both steam and the oven’s sous vide mode help to keep the chicken tender and juicy, and using the probe ensures that the chicken does not overcook. Once the chicken is cooked, switch the oven to a high heat dry cook to simmer the lemon cream sauce so that you don’t have to use your stovetop for anything other than browning the chicken.

Ingredients
3
boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1.5 cups
heavy cream
½ cup
dry white wine
7 cloves
garlic, minced
Zest and juice of 1 lemon, plus 1 sliced lemon, for garnish

1. Preheat Oven

2. Prep the Chicken Breasts

Use a meat mallet to flatten chicken breasts to an even thickness. This step ensures even, fast cooking.

3. Season the Chicken Breasts

Season both sides of the chicken with salt and pepper and place on a parchment-lined baking sheet.

4. Cook Chicken

Insert the probe into the center of one chicken breast. Transfer to the oven, attach the probe, and cook until the probe reaches its target temperature. Remove from the oven.

5. Adjust Oven for Sauce

6. Make Sauce

Combine the cream, wine, garlic, lemon zest, lemon juice, and cornstarch in an oven-safe baking dish.

7. Stir and Blend Sauce

Whisk together the sauce ingredients, then season to taste with salt and pepper.

8. Cook Sauce

Once the oven is heated, place the sauce in the oven and cook until thickened, 10 to 15 minutes. If not yet thickened to your liking, you can leave the sauce in the oven as long as it needs.

9. Sear Chicken

Meanwhile, heat the grapeseed oil in a medium or large skillet over medium-high heat. Add the chicken breasts, in batches if necessary, and sear until golden brown, about 2 minutes per side. (If you don’t want to sear the chicken, you can skip this step.)

10. Combine and Serve

Combine the chicken and sauce in a deep serving dish. Garnish with Parmesan, parsley, and lemon slices. Serve with pasta for a complete meal.
