If you’ve never had steamed cheeseburgers, you’re in for a treat, especially when they’re made in the Anova Precision Oven. Rich, flavorful ground chuck patties get a long slow steam to medium-rare on top of a bed of softened onions, then get topped with melty American cheese, a pickle, and mustard-sliced buns. All of these components then get a chance to meld together in the oven for several minutes before being served. It’s like the best fast food cheeseburger you’ve ever had, but without having to leave the house. The American cheese and yellow mustard evoke authentic fast food flavor, but if you’d like to change it up, you can certainly use deli slices of cheddar cheese and a spicier Dijon mustard instead.

Ingredients
1 medium
onion, finely diced
1 Tbsp

Steps

1. Preheat the Oven

2. Prep the Onions

Combine the onion, oil, and ¼ teaspoon of the salt in the Anova sheet pan. Stir well to coat the onions in the oil, then spread in an even layer on the pan.

3. Cook the Onions

Rack
Bake, stirring halfway through cooking, until all of the onions are translucent and some are lightly charred, 10 minutes. Remove the onions from the oven, turn the oven off, and let both the oven and the onions cool to room temperature.

4. Make the Seasoning Mix

Meanwhile, in a small bowl, combine the remaining salt with the garlic powder.

5. Shape the Patties

Divide the ground chuck into 12 equal portions and shape each into a small patty.

6. Adjust the Oven for the Burgers

Rack
Once the oven has cooled, adjust the temperature.

7. Season the Burgers

Season the burger patties on both sides with the salt-garlic powder mixture. (You may have a little left over.) Evenly space the patties on top of the onions.

8. Cook the Burgers

When the oven is heated, steam the burgers for 1 hour and 50 minutes.

9. Prepare the Buns

Meanwhile, spread about ½ teaspoon of mustard on the top side of each bun.

10. Final Assembly

When the timer goes off, remove the burgers from the oven. Top each patty with two pieces of cheese, followed by 1 pickle chip. Place the top bun, mustard side-down, on top of each patty, then top with the bottom bun.

11. Steam Once More

Return to the oven to steam for 10 more minutes.

12. Serve

Place the bun bottoms on a serving platter, then use a spatula to scrape up the burgers onto the bottom buns, making sure to scrape up the onions from the bottom of the pan. Serve immediately.
