These flavorful and tender meatballs are hearty and filling. They are cooked to crispy perfection on the outside while remaining moist on the inside thanks to the Anova Precision Oven’s steam control. Serve these vegan meatballs with your favorite pasta and marinara sauce for a delicious and family friendly meatless meal.

Ingredients
½ cup
Diced onions
4 cups
Chopped Mushrooms
2 Tbsp
Olive Oil
2 Tbsp
Minced Garlic
15 oz
Canned Chickpeas
¼ cup
Tomato Paste
1 tsp
Dried Basil
1 tsp
Dried Parsley
1 tsp
Dried Oregano
Salt and Pepper to Taste
½ cup
Bread Crumbs
1 cup
Quick Oats (or blended old fashioned oats)
1 Tbsp
Chopped Parsley for Topping

Store-bought marinara sauce of your choice

Steps

1. Preheat Oven

Sous Vide Mode: Off
Steam: 20%
Temp: 350°F

2. Chop Onions and Mushrooms

Chop 1/2 cup onions and 4 cups of mushrooms.

3. Heat Large Skillet

Heat a large skillet on the stovetop to medium heat. Pour in 2 Tbsp of olive oil and let the oil get warm.

4. Add Garlic to Skillet

Add 2 Tbsp of minced garlic to the skillet and let it cook for 1-2 minutes (until fragrant).

5. Saute Onions and Mushrooms

Add chopped onions and mushrooms to the skillet and stir. Cook for about 10 minutes, stirring frequently.

6. Blend

Blend the chickpeas and mushroom mixture on low speed for 2-3 seconds. The mixture will be very rough and textured.

7. Mix in Seasonings & Tomato Paste

Pour the contents of the food processor into a large mixing bowl. Add the tomato paste and seasonings. Mix until combined.

8. Mix in Oats & Bread Crumbs

Add oats and bread crumbs to the mixture and mix until combined.

9. Form Meatballs

Form the meatballs by scooping 1 heaping tablespoon of the mixture out and using your hands to form the mixture into a ball. Place the balls onto a baking sheet.

10. Cook

Rack
Cook the meatballs in the Oven for about 20 minutes. They should be crisp on the outside and tender on the inside.

11. Serve

Serve the meatballs warm with pasta, your favorite marinara sauce, and chopped parsley for a delicious vegan meal.
