These sous vide-style pasteurized eggs are the perfect solution to when you want safe-to-eat raw eggs without heating up a water bath. You can pasteurize up to a dozen eggs at a time following this method.

Steps

1. Add the Eggs and Start Oven

Rack
Carefully place the eggs on the oven rack and close the door. Turn on the oven.
Sous Vide Mode: On
Steam: 100%
Temp: 130°F
Heat: Rear

2. Pasteurize

Rack
Let the eggs come up to temperature with the oven. Cook for 1 1/2 hours after the oven has heated.

3. Remove from Oven

Gently remove the eggs and transfer to an empty egg carton. Let cool. Once cooled, refrigerate for up to 3 weeks before using.
