Butter-Basted Cod with Lemon and Thyme

The Anova Precision Oven makes it easy to perfectly cook white fish that’s tender and flaky all the way through. This recipe takes advantage of the Precision Oven’s sous vide mode and use of the probe to ensure perfect cooking, no matter the thickness of the fish. You can then finish it in a pan with butter and herbs for flavor and color. Note: This method works for cod, as well as similar white fish, such as halibut or sea bass. You can even use the cook settings to prepare fish for a crowd!

Butter-Basted Cod with Lemon and Thyme

Ingredients
2 thick
cod fillets (see note)
½ tsp
kosher salt
Freshly ground black pepper
1 Tbsp
high-quality butter
3 sprigs
fresh thyme, plus more for serving
Flaky sea salt, for serving
Lemon wedges, for serving
Steps

1. Preheat Oven

Rack
Sous Vide Mode: On
Steam: 100%
Temp: 140°F
Heat: Rear

2. Season Fish

Sprinkle the salt and pepper on both sides of the cod.

3. Cook

Rack
Insert the probe into the thickest part of the largest fillet. Place on a parchment- or silicone mat-lined sheet pan. Transfer to the oven, attach the probe, and cook until the probe reaches its target temperature.

4. Pat Dry

When the fish is finished, remove the probe and carefully pat dry with paper towels.

5. Heat Pan

Place a cast iron skillet over medium-high heat and add the butter. Once the butter foams, add the thyme, followed by the fish, presentation-side (a.k.a the pretty side) down.

6. Baste

Cook, basting with the butter, until golden brown on the presentation side, about 1 minute.

7. Serve

Flip out onto a plate and sprinkle with the flaky salt. Garnish with additional thyme and serve with lemon wedges.
