Keto Bison Burgers Stuffed with Bacon and Feta

This delicious, keto-friendly bison burger is stuffed with feta cheese and bacon. It's a classic with a modern twist, and it is a great meal-prep item that holds its flavor and quality throughout the week. By using the Anova Precision Oven’s convection fan and food probe, these burgers always turn out perfectly and evenly cooked. Note: I prefer larger burgers, so I divided the burger mixture into five patties. If you prefer smaller burgers, you can make more. Be sure to make all of the burgers the same size so that they cook evenly.

Steps

1. Preheat the Oven

2. Prepare Bacon

Place the bacon in a single layer on a parchment-lined rimmed sheet pan. Make sure there is space between each slice.

3. Cook Bacon

Rack
Transfer to the oven and cook until crisp, 19 minutes. Remove from the oven.

5. Chop Bacon

Cut the bacon into small pieces.

6. Assemble Burger Ingredients

Combine the bison, feta, adobo sauce, Worcestershire, and cooked bacon in a large bowl. Season with salt and pepper.

7. Mix Burgers

Evenly mix all the ingredients in the bowl. Cook a small piece and in a hot pan. Taste for seasoning. Add additional salt and pepper to the large bowl of burger mixture.

8. Form Patties

Divide the mixture into five even portions and shape into patties (see note). Place on a clean rimmed sheet pan and insert the probe into the center of one of the patties.

9. Cook

Rack
Transfer to the oven, attach the probe, and cook until the burgers reach their target temperature, 15 to 20 minutes. Remove from the oven. Place a slice of cheese on each burger and let rest for 5 to 10 minutes before building the burgers.

10. Build and Serve

Build the burgers using lettuce, tomato, onions, and pickles. Add a skewer to hold everything in place. Serve with the condiments of your choice.
