Irish soda bread comes together quickly and easily when using the Anova Precision Oven’s steam setting. Traditionally, Irish soda bread was cooked in a covered skillet to trap steam and produce a crust with a soft interior. We can use the Precision Oven to produce the same results with ease. The two-stage bake transitions automatically to create a bread with golden brown color, crisp crust, and fully cooked interior, all without worrying about burning.

Steam-Baked Irish Soda Bread

Ingredients
3 cups (420g)
all-purpose flour
1 cup plus 2 Tbsp (140g)
oat flour
1 Tbsp (13g)
brown sugar
1.5 tsp (4.5g)
kosher salt
1 tsp (5g)
baking soda
4 Tbsp (57g)
unsalted butter, cut into cubes
1 cup (140g)
raisins
1.75 cups (425g)
buttermilk
1 large
egg, lightly beaten
Steps

1. Preheat the Oven

Steam: 25%
Temp: 395°F
Heat: Rear

2. Mix Dry Ingredients

In a large bowl, whisk together the flours, sugar, salt, and baking soda until evenly combined.

3. Work in Butter and Raisins

Add the butter. Use your hands to rub it into the flour mixture to create a course meal. Stir in the raisins.

4. Add Wet Ingredients

Make a well in the center of the flour mixture. Pour in the buttermilk and egg. (Keep the measuring cup used for the buttermilk.) Using a stiff spatula or wooden spoon, mix until a shaggy dough forms.

5. Shape

Transfer to a lightly floured counter. Knead lightly a few times to bring the dough together, then bring together to form a round. Remember, this is not a yeast bread so you don’t need to worry about getting the dough smooth and shiny.

6. Wash and Cut

Place on a parchment or silicone mat-lined sheet pan. Brush with residual buttermilk from the measuring cup. Use a sharp chef’s knife to cut a large X in the top of the dough about 1 inch deep.

7. High Heat Bake

Transfer to the oven and bake for 10 minutes.

8. Final Bake

Rack
Let the oven automatically adjust to the second baking stage. Continue to bake until the bread is golden brown and sounds hollow when tapped on the bottom, about 28 minutes.

9. Cool and Serve

Let cool on a wire rack for 10 minutes before serving with butter.
