Browned Butter Apple Crisp

For me apple crisp is all about the perfect topping. I love a crisp with a chewy-crunchy topping piled on diced apples tossed with plenty of cinnamon — even better when it’s made with nutty browned butter. Using the top and rear setting on the Anova Precision Oven enables you to get a golden brown crisp without overcooking the apples.

Browned Butter Apple Crisp

Ingredients
12 Tbsp
unsalted butter
2.5 lb
granny smith apples (about 5 large apples)
1 cup
dark brown sugar, divided
1 Tbsp
ground cinnamon, divided
¾ tsp
kosher salt, divided
1 cup
old-fashioned oats
1 cup
all-purpose flour
Steps

1. Preheat the Oven

Steam: Off
Temp: 340°F
Heat: Top, Rear

2. Brown Butter

In a small saucepan over medium-low heat, melt the butter. Once the butter has melted, start stirring it frequently with a rubber spatula to keep the milk solids from sticking to the bottom of the saucepan. Cook, stirring, until the milk solids turn a nice golden brown, 5 to 7 minutes. Remove from the heat, transfer to a heatproof bowl, and let cool.

3. Prepare Apple Filling

Peel the apples, cut into ¾-inch chunks, and place in a large bowl. Add ⅓ cup of the sugar, 2 teaspoons of the cinnamon, ¼ teaspoon of the salt, and 2 tablespoons of the browned butter. Mix thoroughly and transfer to an 11- by 7-inch baking dish.

4. Make Topping

Using the same bowl, combine the oats, flour, remaining ⅔ cup sugar, remaining teaspoon cinnamon, and remaining ½ teaspoon salt. Stir to combine. Add the rest of the browned butter and mix until thoroughly combined. Sprinkle the topping on the apples.

5. Bake

Rack
Transfer the to the oven and bake until the juices are bubbly and the topping is crisp and well browned, 25 to 30 minutes.

Remove from the oven and let cool for 20 minutes before serving.
