Beer Battered Harissa Cauliflower bites with Za’atar Yogurt

Cauliflower is a vegetable that truly shines in the Anova Precision Oven. This recipe is an elevated take on Buffalo cauliflower bites using Mediterranean spices. It’s a great health conscious option for those who are wanting to explore more plant based dishes. While Harissa is spicy, it also has a complex flavor profile with strong earthy and nutty tones. It’s becoming quite popular and is available in paste or dried spice forms. In this recipe, I utilized a squeezable ready to use Harissa hot sauce (which is completely different from the paste), but you can substitute whatever Harissa form you can find. Just make sure to adjust for flavor starting out with a little bit and adding more according to taste. You can also use regular hot sauce if that is what’s available to you.

Ingredients

Whole cauliflower, broken into florets
¾ cup
All purpose flour
1 tsp
Salt
1 tsp
Paprika
2 tsp
Garlic powder
½ tsp
Pepper
¾ cup
Light beer
¼ cup
Harissa hot sauce or any hot sauce
1 Tbsp
Honey
1 tsp
Extra virgin olive oil
1 cup
Plain Greek yogurt
¼ cup
Water
2 tsp
Salt
1 tsp
Za’atar spice
Steps
1. Assemble batter
Assemble batter. Combine flour, salt, pepper, garlic powder, paprika, and beer in a bowl. Whisk until well incorporated.
2. Coat cauliflower with batter
Toss Cauliflower florets in batter making sure that all the florets are coated well. You may have to do this in batches to ensure an even coating.
Set battered cauliflower florets on a parchment lined sheet pan.
3. Bake cauliflower

Bake Cauliflower in the Oven at 400F 0% steam for 20 minutes. If you want a crispier batter, take the cauliflower out at the 10 minute mark spray generously with olive oil and continue to bake for another 10 minutes.

5. Assemble yogurt sauce
In the meantime, assemble the sauce. Combine Greek Yogurt, water, and salt in a small bowl. Add Za’atar spice and whisk well. Transfer sauce to serving bowl and drizzle surface with Olive Oil.
6. Toss in Harissa / hot sauce
In a large bowl, combine Harissa hot sauce (or any hot sauce you like), honey, and olive oil. Toss baked cauliflower florets to coat evenly with sauce.
7. Serve and enjoy
Arrange cauliflower on a serving platter with the Yogurt Sauce on the side. Serve immediately.
