Sheet Pan Fried Eggs, Bacon, and Toast

This is my favorite way to make my bacon, eggs, and toast. It is quick, simple, and efficient. The trick is to use the Anova Precision Oven’s top and rear heat with a moderate oven temperature and a big burst of steam. These settings help to evenly render the fat from the bacon and quickly “fry” eggs in the rendered fat — the steam brings even, quick heat to both of these breakfast staples while still allowing the bacon to crisp and the edges of the eggs to gently brown. Adding sliced sandwich bread directly to a second oven rack while the eggs cook means your toast will be ready with the rest of your breakfast. Notes: Since bacon comes in different thicknesses, and some people like their bacon crisper than others, you’ll need to keep an eye on it. You can remove it sooner than the suggested cooking time or, if you want it crispier once the eggs are finished, you can return the bacon to the oven for 1 to 2 minutes before serving. You will need a quarter rimmed sheet pan for this recipe. The Anova ridged sheet pan will not work.

Steps

1. Preheat the Oven

Rack
Place the racks in the 3rd and 5th positions.
Sous Vide Mode: Off
Steam: 100%
Temp: 350°F
Heat: Rear, Top

2. Cook the Bacon

Rack
Lay the bacon on a quarter sheet pan. Place the sheet pan in the oven on the 3rd rack and bake until the bacon starts to foam and the fat has started rendering, 11 minutes for thin bacon and 15 minutes for thick-cut bacon.

Steam: 100%
Temp: 350°F
Heat: Rear, Top

3. Flip Bacon and Add Eggs

Remove the pan from the oven and flip the bacon. Nudge it over to one side of the pan. Tip the pan slightly to get the bacon grease to cover the opposite side of the sheet pan. Crack two eggs side by side into the bacon grease and sprinkle with a pinch of salt.

4. Cook Eggs and Toast

Place the pan back into the oven on the 3rd rack and place the bread on the 5th rack. Bake until the eggs are cooked, 3 minutes for a soft yolk, 4 minutes for over-medium, and 5 minutes for over-hard. Flip the toast after 3 minutes and continue to cook until golden brown, 2 more minutes. Keep an eye on your bacon. Thinner bacon may cook faster and thicker bacon may need a few more minutes depending how crisp you like it. It’s fine to remove the eggs and finish cooking the bacon alone if needed.

5. Serve

Remove the eggs and bacon from the pan and serve immediately with the toast.
