This popular dish of fresh rice noodles with vegetables (and often meat) is usually stir-fried. This version is steamed and finished with a quick sear. Using the Anova Precision Oven makes the dish a little more foolproof and less likely to be overcooked.

Ingredients
½ lb
Gai lan (Chinese broccoli)
1 stalk
Green onion, finely sliced

Medium carrot

Medium shiitake mushrooms, sliced

Garlic black bean sauce

Steps

1. Preheat Oven

2. Chop the gai lan

Trim off about 1/2 inch of the gai lan stem and discard. Chop the gai lan into roughly 1/2 inch segments.

3. Slice the carrot

Slice the carrot thinly on the bias.

4. Julienne the carrot

Shingle the sliced carrots and cut into julienne.

5. Separate the noodles

Fresh rice noodles should be soft and pliable. But if they have been refrigerated too long, they will harden. You will need to separate the noodles into smaller sections.

6. Prepare the pan

Brush 1 teaspoon of vegetable oil on the perforated pan (or sheet pan). Place the noodles on the greased perforated pan and add the vegetables on top.

7. Steam the noodles

8. Build the sauce

Combine the soy sauce, garlic black bean sauce, and water in a small bowl. Stir to combine.

9. Prepare the solid pan

Cover the solid pan with foil. Brush the remaining teaspoon of vegetable oil on the foil-lined pan.

10. Preheat Oven

Temp: 450°F
Heat: Top

11. Transfer noodles to foil-lined pan

Once the noodles have steamed, transfer them to the foil-lined pan.

12. Add the sauce

Pour the sauce mixture over the noodles and gently toss to combine.

13. Sear the noodles

Rack
Place the noodles in the oven and sear for 3-5 minutes, or until a few of the noodles start to crisp on the edges.

14. Serve

Transfer the noodles to a serving dish and eat while hot. This will serve four as a side dish or two as a light meal.
