Cilantro Lime Chicken Thighs

This cilantro lime chicken is zesty, garlicky, and so flavorful from the lime juice. Because of this recipe uses the sous vide function of the Anova Precision Oven, the chicken doesn't overcook and stays perfectly tender and juicy.

Cilantro Lime Chicken Thighs

Ingredients
2 lb
boneless skinless chicken thighs (6 to 7 thighs)
¼ cup
freshly squeezed lime juice (from 1 large lime or 2 small limes)
¼ cup
minced cilantro (about half a bunch)
4
cloves garlic, minced
1.5 Tbsp
honey
1 tsp
ground cumin
½ tsp
table salt
½ tsp
freshly ground black pepper
1 Tbsp
neutral oil
Steps

1. Marinate Chicken

Place the chicken thighs into a large mixing bowl. Add in the lime juice, cilantro, garlic, honey, cumin, salt, and pepper. Mix well to combine. Cover with plastic wrap, refrigerate, and let marinate for at least 30 minutes or up to 2 hours.

2. Preheat

3. Cook

Place the chicken on a sheet pan with the marinade. Insert the probe into the center of the thickest thigh. Place into the steam oven, attach the probe, and cook until the probe registers 165°F.

4. Remove Chicken

Remove the chicken from the oven, reserving the drippings in the sheet pan.

5. Sear the Chicken

Heat a grill pan on the stovetop over high heat. Add in 1 tablespoon of oil and let it heat until smoking. Place the chicken on the grill pan and sear until grill marks form, 1 to 2 minutes per side. Transfer to a plate.

6. Make the Glaze

Pour the drippings from the sheet pan into a skillet. Set it over medium heat and let it cook until the mixture reduces to form a glaze. Brush the glaze over the chicken.

7. Serve

Serve the cilantro lime chicken warm with a side of rice and a salad. Enjoy!
