Asparagus Puff Pastry Tart

This perfectly cooked asparagus is nestled in a cheesy puff pastry tart that’s ideal for Easter and other spring brunches. By using the steam function of the Anova Precision Oven, you’ll never end up with dry, stringy asparagus again! Note: This recipe works best when there’s some airflow underneath the asparagus while steaming. To do so, the recipe uses a perforated pan, which is now available to order through Anova. If you don't have one, placing a wire rack over a sheet pan or oven rack works as a substitute.

Asparagus Puff Pastry Tart

Ingredients
8 oz
asparagus, trimmed
1 sheet
puff pastry, thawed
4 oz
cream cheese, at room temperature
¼ cup
finely shredded Gruyère cheese
1 clove
garlic, grated or minced
2 tsp
Dijon mustard
¼ cup
finely shredded Parmesan cheese
1 large
egg, beaten with 1 tablespoon of water
1 Tbsp
extra-virgin olive oil
Grated nutmeg
Flaky salt and freshly ground black pepper
Chopped fresh thyme
Pea shoots or other microgreens
Steps

1. Preheat the Oven

2. Steam Asparagus

Rack
Place the asparagus in a single layer in a perforated pan (see note). Transfer to the oven and cook until just tender, about 7 minutes. Remove from the oven.

3. Adjust the Oven for the Pastry

4. Roll Pastry

Place the puff pastry sheet on a piece of parchment paper. Roll the sheet until it is just smaller than the Anova sheet pan. Place the pastry, still on the parchment, on the sheet pan.

5. Make Cheese Filling

In a medium bowl, combine the cream cheese, Gruyère, and garlic. Use a rubber spatula to thoroughly incorporate. If the mixture is too stiff to stir, microwave for 5 seconds on high power before stirring again.

6. Add to Pastry

Spread the Dijon in a very thin layer on the pastry, leaving a 3/4- to 1-inch boarder around the edge. Use an offset spatula to spread the cheese mixture over the mustard. Use a paring knife to cut an indendation around the cheese, making sure to not cut all of the way through the pastry.

7. Bake Pastry

Transfer to the oven and bake until the edges are puffed and the filling is browned and bubbled, 12 to 15 minutes. Remove from the oven.

8. Add Asparagus and Parmesan

Immediately add the asparagus to the center of the pastry, nestling it into the hot cheese. Top with the Parmesan.

9. Add Egg Wash

Brush the edges of the tart with the egg mixture.

10. Broil

Rack
Return to the oven and broil until the asparagus just starts to char, about 3 minutes. Remove from the oven.

11. Season

Drizzle with the olive oil and sprinkle with the nutmeg, salt, and pepper. Top with the thyme and microgreens.

Slice into 6 pieces and serve.
