Asparagus Puff Pastry Tart

Perfectly cooked asparagus using the Anova Precision Oven steam function, nestled in a cheesy puff pastry tart that’s ideal for Easter and other spring brunches. No more dry, stringy asparagus!

Asparagus, trimmed

Sheet puff pastry, thawed
¼ cup
Finely shredded gruyere cheese

Cream cheese, room temperature

Garlic clove, finely grated

Dijon mustard

Nutmeg
Flaky salt
Freshly ground black pepper
Fresh thyme
Pea shoots or microgreens

1. Preheat for steaming

3. Roll pastry

Place thawed puff pastry sheet on a piece of parchment paper. Roll lightly to extend length to fit Precision Oven tray. Return parchment and rolled dough to tray.

4. Prepare cheese base

In a medium bowl, combine room temperature cream cheese, grated garlic, and gruyere cheese with a wooden spoon or rigid spatula. Work until soft and combined. Microwave for five seconds if needed to make spreadable.

5. Layer base

Spread dijon mustard in a very thin layer on pastry, leaving a 3/4 inch boarder around the edge. Dollop on cheese blend on top of mustard and spread to same edges with an offset spatula.

Pastry will puff on edges and filling will be browned and bubbled.

8. Add asparagus and parm

Quickly add the steamed asparagus to the center of the tart. You want the asparagus to nestle into the hot cheese. Add 1/4 cup grated Parmesan.

9. Egg wash

Egg wash the tart crust edges and sides.

10. Broil

11. Cook for three minutes

Top with thyme, greens, salt, pepper, and nutmeg.
