Mini Apple Galettes with flaky pastry and a well spiced apple filling. With the steam function the Anova Precision Oven poaches the apples as they cook yielding a more tender apple filling. These apple galettes are the perfect fall or holiday dessert!

Ingredients
1 cup
unsalted butter, cold
2 cups
flour
¾ cup
whole milk, cold
1 tsp
salt
1 lb
Granny Smith apples, peeled, cored, and sliced into 1/4 inch thick slices
1 Tbsp
lemon juice
1 Tbsp
vanilla extract
1 Tbsp
cornstarch
1 Tbsp
all purpose flour
1 tsp
cinnamon powder
Steps

1. Prepare Pan

Line your oven baking sheet with parchment paper

2. Make Dough

Use a box grater to grate the cold butter into a large bowl. Add in 2 cups of flour and salt and mix with finger tips to combine. It's okay to still have flakes of butter. Add the cold milk and mix to form a dough.

3. Chill Dough

Wrap the dough in plastic wrap and place in the fridge to chill.

4. Make the Filling

In a large bowl combine the apples, lemon juice, and vanilla extract. In a small bowl whisk together the cornstarch, 2 tablespoons of flour, cinnamon, 1/2 cup granulated sugar and a pinch of salt. Add the sugar mixture to the apples and toss to coat each slice.

5. Preheat Oven

Steam: 50%
Temp: 350°F

6. Make Galettes

Lightly flour a surface then place chilled dough on the surface and roll out to 1/8 inch thickness. Cut 6-inch rounds of the dough. Place the rounds on the prepared pan. Strain the apples then place the apples on the rounds leaving a 2 inch border. Wrap the excess dough over the apples in an overlapping manner.

7. Brush with Egg Wash

In a small bowl whisk together one egg and one tablespoon of water. Use a pastry brush to brush each galette with the egg wash.

8. Sprinkle With Coarse Sugar

Sprinkle coarse sugar over the galettes. I sprinkled turbinado sugar.

9. Bake

Rack
Place the galettes in the oven and bake until golden brown.

Serve with caramel sauce drizzled on top.
