Crispy Chicken Wings

Shatteringly crispy, fall-off-the-bone, and ready for any sauces or flavors you want to add. This basic method for air-fried chicken wings is a great starting point for your own creativity. As with any frying, this recipe will generate some vaporized fat wafting around your kitchen. So, open a window or run your oven hood for better ventilation. Keeping the oven door closed as much as possible during cooking will help, too.

MSG (optional, but recommended)

High smoke point oil (grapeseed), in a spray bottle

1. Preheat

Sous Vide Mode: Off
Steam: Off
Temp: 437°F
Heat: Top, Rear

2. Combine dry ingredients in a gallon bag

Combine the rice flour, baking powder, salt, and MSG (if using) in a gallon-sized bag. Shake the bag to blend the dry ingredients together.

3. Toss wings in coating

Working in batches, add wings to the bag. Roll the top of the bag over itself to create a seal, and shake everything vigorously until the wings are fully coated.

4. Arrange wings for air frying

If you have an air frying basket for the oven, this is a great time to use it. Otherwise, you can use a normal sheet pan lined with foil, but will need to flip the wings during cooking to ensure even browning on all sides. Arrange the wings, leaving room between them for airflow.

5. Spray with oil

Spray the wings with high-smoke-point oil until just barely damp. Flip the wings and spray the other side. The oil will help conduct heat more evenly and will result in better browning than un-oiled wings.

6. Air-Fry until golden brown

If using an air fryer basket, place a foil-lined baking sheet in the bottom rack of the oven to catch drippings. Although no steam is being generated, you may see lots of steam pouring out of the oven vent - this is the water being driven off the wings as they're frying. Flip once about 15 minutes into cooking. Extend cooking time as necessary until wings are golden brown.

7. (Optional) Toss in your favorite sauce

Straight out of the oven, toss the wings in your favorite sauce, if desired.
