Crispy Air-Fried Chicken Wings

These wings are shatteringly crispy, fall-off-the-bone, and ready for your favorite sauces or seasonings. This basic method is a great starting point for your own creativity. Notes: This recipe will generate some vaporized fat and smoke in your kitchen. So open a window or run your oven hood for better ventilation. Keeping the oven door closed as much as possible during cooking will help, too. Although no steam is being generated in the cook, you may see lots of steam pouring out of the oven vent—this is the water being driven off the wings as they cook.

Crispy Air-Fried Chicken Wings

Ingredients
50 g (5 Tbsp)
white rice flour
2 g (1/2 tsp)
baking powder
2 g (1/2 tsp)
MSG (optional, but recommended)
5 g (1 1/2 tsp)
kosher salt
2 lb
chicken wings, split into flats and drumettes
1 Tbsp
neutral oil with a high smoke point, such as grapeseed, in a spray bottle
Steps

1. Preheat the Oven and Prep Pan

Line a sheet pan with aluminum foil. Place a rack over the sheet pan. (You can also use the Anova perforated pan, flipped upside down, instead of the rack. If you have an air fryer basket that fits in the oven, you can skip this step.)

2. Combine Dry Ingredients

Combine the rice flour, baking powder, and MSG (if using) in a gallon-size zipper-lock bag. Seal the bag and shake to combine.

3. Coat Wings

Season the chicken wings with the salt. Add the wings to the bag of coating, seal the bag, and shake well to thoroughly to coat the wings.

4. Oil Wings

Place the wings in a single layer on the prepared rack. Spray with the oil. Flip and spray the underside. Arrange the wings so that they are skin-side up.

5. Cook

Rack
Transfer to the oven. (If using an air fryer basket, place a sheet pan on a rack below the wings to catch drips.) Cook, flipping after 15 minutes, until the wings are cooked through and deep golden brown, about 25 minutes total. Feel free to extend the cooking time if needed to ensure golden brown perfection.

6. Sauce and Serve

If you’d like to sauce the wings, toss them in the sauce immediately after they come out of the oven. Serve hot!
