Steam-Baked "Refried" Beans

Refried beans made even easier. Use steam in the Anova Precision Oven to cook the beans, then place back in the oven with 100% steam to “refry” before mashing. Want spicy refried beans? Add dried chiles to the beans before cooking. Note: After further testing, this recipe has been updated to call for soaking and to use a new cooking method for the first stage.

Ingredients
8 oz
dry pinto beans, rinsed and sorted
2 quarts
filtered water, plus more for soaking
2 tsp
dried Mexican oregano
6 slices
bacon
¾ cup
chopped white onion
2 cloves
garlic, minced
1.5 tsp
kosher salt
Toppings such as crumbled Cotija cheese, sliced serrano chiles, chopped fresh cilantro, diced avocado, and lime wedges, for serving

Steps

1. Soak the Beans

Put the pinto beans into a large bowl and cover with enough water so that there are at least two inches of water sitting above the beans. Let soak at room temperature for at least 8 hours or up to overnight.

2. Prepare the Beans

Drain the soaked beans and transfer to large Dutch oven. Add the 2 quarts water and the oregano.

3. Add to Cold Oven and Turn On

4. Cook the Beans

Cook the beans until tender, about 2 1/2 hours after the oven has fully heated.

5. Cook the Bacon

Meanwhile, cook the bacon in a cast iron skillet on the stovetop until crisp. Remove the bacon and reserve for another use. Keep the rendered fat in the skillet.

6. Sauté the Onion and Garlic

Place the skillet with the bacon fat oven medium heat. Add the onion and garlic. Cook, stirring frequently, until soft and translucent, about 5 minutes. Remove from the heat.

7. Assemble the Refried Beans

When the beans are finished, drain, reserving 2 cups of the cooking liquid. Transfer the beans to a clean baking dish. Add the entire contents of the skillet to the beans, along with about 1/2 cup of the reserved bean cooking liquid and the salt.

8. “Refry” the Beans

Place the beans back in the oven and adjust for the second cook. Cook until the bean mixture is warm and flavorful, about 10 minutes after adjusting the oven settings.

9. Blend

Mash or blend the refried beans until they have reached your desired consistency. Add additional bean cooking liquid, if desired.

Serve immediately, with the toppings of your choice.
