Olive Oil Flavor Infusion 101

This method of adding a variety of flavors to your olive oil in the Anova Precision Oven sous vide mode allows you to create multiple flavors in one cook. The infusion process takes only an hour instead of days, making small batches easy (and therefore keeping the flavor impact- not letting it degrade over time). Remember, excess heat can make flavors disappear, so use flavored olive oils as more of a “finishing oil” over vegetables, pasta, or as a dipping sauce with bread. This recipe shows two flavors of oil, each creating a cup.

Ingredients

Large garlic cloves
1 Tbsp
Extra Virgin Olive oil
2 cups
Extra Virgin Olive Oil, divided
A few sprigs fresh thyme
A few sprigs fresh oregano

Large lemon, peeled
Steps

1. Preheat

Rack
Sous Vide Mode: On
Steam: 100%
Temp: 145°F
Heat: Rear

2. Peel garlic

Remove peel, crush and cut clove in half.

3. Sautée

Take 1 T olive oil and heat in a small pan over medium on the stovetop. Add garlic, stirring regularly to avoid burning. Sauté 5 minutes until fragrant.

4. Add to jar

Add sautéed garlic to jar. Add 1 cup oil. Seal jar, then loosen to “finger tight” as you would in a traditional sous vide bath.

5. Prepare second jar

Wash lemon. Peel, avoiding pith.

6. Add herbs

Add herbs and peel to second jar with lid. Add 1 cup oil. Place lid on jar to “finger tight” seal.

7. Place on pan

Add your jars to the APO sheet pan for easy addition/removal.

8. Infuse oil

9. Remove solids

Remove citrus peel and herbs and discard. Garlic can remain in jar. Store in the fridge and use relatively quickly over the next week (the benefit of being able to make small batches!). Oil may become cloudy in fridge, but will return to normal once at room temperature to drizzle over foods. Remember, infused oil is kept in the fridge to reduce risk of food borne illness.
