unsalted butter, at room temperature

granulated sugar

Steps
1. Preheat the Oven and Prepare Pans

Line two sheet pans with parchment paper. (Or, if you only have one sheet pan, place a second sheet of parchment on the counter for portioning the dough. Move it to your sheet pan after baking the first batch.)

2. Make the Dough
In a medium bowl, beat together the butter and sugar with an electric hand mixer until evenly combined, about 1 minute. Add the flour, cinnamon, salt, and nutmeg. Beat until combined.
3. Portion Dough
Scoop the dough into 24 portions using a medium cookie scoop. Use your hands to roll each portion into a ball. Divide between the two prepared pans, spacing them evenly.
4. Press with Fork
Use the tines of a fork to press a cross-hatch pattern into each cookie.
5. Bake
Rack
Transfer one sheet pan to the oven and bake the cookies for 8 to 10 minutes. An 8-minute bake will yield a softer cookie. Remove from the oven and repeat with the second batch.
