Spanish Turkey Meatloaf

Delicious meatloaf making this a healthier option by using Turkey. A traditional Spanish meatloaf calls for Turkey, potatoes, and manchego cheese. We opted to take the potatoes out for this recipe but still leaving in the Manchego cheese to help get give the meatloaf a slightly smoky flavor. If you want to keep the traditional Spanish Meatloaf - add 1 cup of diced parboiled potatoes to the meatloaf mixture. I put the glaze ingredients towards the end of the list just in case you don’t want to add the glaze to the finished meatloaf.

Steps

1. Sauté Vegetables

Sauté the onion, garlic and green pepper in a medium pan on the stove top on medium high heat for about five minutes until the vegetables are soft.

2. Combine Ingredients

After the vegetables cool, mix the cheese, panko crumbs, 3 tsps smoked paprika, 1 tsp cumin, thyme, 1/4 cup ketchup, chiles and egg in a medium mixing bowl until well combined.

3. Add Turkey To Mixture

Add ground Turkey to the mixture and gently mix together just until combined making sure not to over mix the meatloaf mixture.

4. Place Meatloaf In Pan

Place meatloaf in a greased bread baking pan.

5. Preheat Oven

Rack

Steam: 30%
Temp: 350°F
Heat: Rear

6. Cook Meatloaf

Cook meatballs until meatloaf is cooked through.

7. Make Glaze

Mix together remaining ketchup, sugar, cumin, paprika until well combined.

8. Glaze Meatloaf

Remove meatloaf from oven. Let the meatloaf cook for about 5 to 10 minutes. Place glaze on the meatloaf. Garnish with chopped cilantro.
