Steam-Baked Classic Sheet Pan Pancakes

Pancakes are always a favorite in my family, but it can be time consuming to flip enough pancakes to serve a crowd. A sheet pan pancake is the perfect solution. By using steam injection in the Anova Precision Oven, it’s easy to achieve a tender and fluffy result in minutes. And the combination of the top and rear heat settings give you a picture-perfect golden pancake every time. You can also personalize your pancake by sprinkling fresh berries, chocolate chips, nuts, or sliced bananas on top before baking. To reheat leftovers, preheat the oven to 250°F (121.1°C) using rear heat and 50% steam. Place pancake slices directly on the third rack of the oven and heat for 7 minutes.

Ingredients
2.25 cups (314g)
all-purpose flour
3 Tbsp (40g)
granulated sugar
2 tsp
baking powder
1 tsp
baking soda
1 tsp
kosher salt
2 cups
whole milk
2 large
eggs
1 Tbsp
fresh lemon juice
4 Tbsp
unsalted butter, melted and cooled
Steps

1. Preheat the Oven and Prepare Pan

Rack
Grease a rimmed sheet pan thoroughly with nonstick oil spray.
Sous Vide Mode: Off
Steam: 50%
Temp: 400°F
Heat: Rear, Top

2. Make Batter

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together the milk, eggs, and lemon juice. Add the wet ingredients to the dry ingredients and whisk together until just combined. Make sure to not over mix; small lumps are fine. Fold in the melted butter.
Make Batter

3. Bake

Rack
Pour the batter into the prepared sheet pan and spread in an even layer batter. Transfer to the 3rd rack of the oven and bake until puffed up and golden brown on top, about 8 minutes.

Remove from the oven. Slice and serve warm.
