Air-Fried Sweet Potato Fries

When they’re crispy and well-seasoned, sweet potato fries are the perfect side or snack. And unlike regular French fries, which benefit from a two-step cooking process, sweet potato fries don’t need any moisture — just a quick cook in the Anova Precision Oven’s air fryer mode and a little bit of cornstarch and oil. Sweet potato fries should be seasoned after they come out of the oven and you can use just sea salt, or use my seasoning mix for more flavor. Note: After further testing, this recipe has been updated to use a higher oven temperature, top and rear heating elements, and a shorter cooking time.

Air-Fried Sweet Potato Fries

Ingredients
2
sweet potatoes, about 9 ounces (260g) each, peeled and cut into 1/3-inch (8mm) matchsticks
1 Tbsp
cornstarch
2 Tbsp
extra-virgin olive oil
½ tsp
fine salt
½ tsp
ground cinnamon
¼ tsp
granulated sugar
¼ tsp
ground cayenne or sweet paprika (optional)
Steps

1. Preheat the Oven and Prepare Pan

Rack
Line a sheet pan with parchment paper or a silicone baking mat.
Sous Vide Mode: Off
Steam: Off
Temp: 400°F
Heat: Rear, Top

2. Coat

In a large bowl, toss the sweet potatoes with the cornstarch until evenly coated. Add the oil and toss to coat again. The coating will become a little gummy — that’s good! Evenly space the potatoes on the prepared pan.

3. Cook

Rack
Transfer to the oven and cook, flipping halfway through, until crisp and browned, about 20 minutes.

4. Mix Seasoning

While the fries cook, mix together the salt, cinnamon, sugar, and cayenne (if using) in a small bowl.

5. Season and Serve

Carefully remove the fries from the oven and sprinkle with the seasoning mix. Serve immediately.
