Also known as Devils on Horseback, is a popular appetizer or hors d’oeuvre. It’s sweet, smoky, salty and creamy flavors is always a hit at parties and gatherings. It’s very simple to make - pitted dates are stuffed with a creamy cheese, wrapped in smoky bacon and then baked in the Oven until browned. It’s a good idea to make a big batch of these because they tend to disappear quickly when served. The Anova Precision Oven is the perfect tool for the avid home entertainer because of its versatility. A couple of tips for success for this recipe: I used an almond in each date to add a little crunch, but is completely optional. You can use cream cheese, blue cheese, goat cheese or even stilton if you like - the choice is yours. It’s important to use regular cut bacon instead of the thick cut form as it cooks faster. And finally, to avoid the stuffing from oozing out during the bake process, freeze the stuffed dates before wrapping it with bacon. It will still cook through as the bacon browns.

Ingredients

Pitted dates
¾ cup
Goat cheese, cream cheese, or blue cheese

Salted whole almonds
16 oz
Bacon, cut in half
Blue cheese, crumbled (optional)
2 Tbsp
Balsamic glaze for drizzling (optional)
Steps

1. Stuff dates

Prepare dates. If you happen to buy ones with the pits, just take them out by cutting lengthwise across the date to remove the pit. Stuff each date with one almond. With a small spoon, smear a little bit of goat cheese in each date. Press together to close slits. Freeze dates to make sure the cheese is set for about a few hours.

2. Wrap with bacon

Wrap each date with bacon. If you want, you can insert toothpicks in each one to hold the bacon in place.

3. Bake dates

Place dates in a sheet pan lined with foil for easy cleanup. Bake in Oven at 350F, 0% steam for 15 minutes.

7. Serve and enjoy

Take stuffed dates out of the oven and blot on a paper towel to absorb the grease. Then arrange on a serving platter, drizzle with balsamic glaze and blue cheese crumbles. Serve and enjoy!
