Mixed Berry Sheet Pan Pancake

This sheet pan pancake is perfect for breakfast! Using the steam function of the Anova Precision Oven to cook the pancake makes it evenly tender and fluffy. As it cooks, the fruits get jammy, the cream cheese melts, and the batter puffs up. Note: For a slightly puffier pancake, substitute milk for the buttermilk.

Ingredients
2 cups
all-purpose flour
2 Tbsp
granulated sugar
1 Tbsp
baking powder
¼ tsp
salt
2 cups
buttermilk or whole milk (see note)
2 large
eggs, beaten
¼ cup (4 Tbsp)
unsalted butter, melted
1 cup
strawberries, hulled and sliced
1 cup
blueberries
4 oz
cream cheese
Steps

1. Preheat the Oven and Prepare Pan

Rack
Line a rimmed sheet pan with parchment paper or a silicone baking mat. Grease with nonstick oil spray.
Sous Vide Mode: Off
Steam: 50%
Temp: 350°F
Heat: Rear

2. Make Batter and Assemble Pancake

In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add in the buttermilk, eggs, and melted butter. Whisk until just combined. Pour the batter into the prepared pan. Level the top of the batter with a spatula. Top the batter with strawberries, blueberries and dollops of cream cheese.

3. Bake

Rack
Transfer to the oven and bake until fruits are jammy and bubbly and the pancake is slightly brown, 15 minutes for a lightly browned pancake or up to 20 minutes for a more deeply browned pancake.

4. Serve

Slice and serve warm with more fresh fruit and a drizzle of maple syrup, if desired.
