Ingredients

cremini mushrooms
1 Tbsp
extra-virgin olive oil
2 Tbsp
finely chopped garlic
1 Tbsp
finely chopped shallot
Cannibal All-Purpose Spice, to taste
8 oz
softened cream cheese
½ cup
grated Parmesan cheese, divided
¼ cup
dry breadcrumbs
2 Tbsp
chopped fresh parsley, plus more for garnish
Steps

1. Preheat the Oven and Prepare Pan

Line a sheet pan with aluminum foil.

Temp: 350°F
Heat: Rear

2. Prep the Mushrooms

Cut the stems off of the mushrooms and finely chop them, setting the mushroom caps aside for later.

3. Make the Filling

Heat the oil in a medium skillet over medium-high heat. When the oil is shimmering, add the mushroom stems, garlic, and shallots. Season with the all-purpose seasoning. Cook, stirring frequently, until the stems are soft, about 5 minutes. Transfer to a medium bowl. Add the cream cheese, ¼ cup of the Parmesan, breadcrumbs, and the 2 tablespoons parsley. Stir until evenly combined.

4. Assemble the Mushrooms

Place the mushrooms, cap side down, on the prepared pan. Spoon a generous amount of the cream cheese mixture into each mushroom. Top with the remaining Parmesan.

5. Roast and Serve

Rack
Transfer to the oven and roast until the cheese is golden brown, 15 to 20 minutes. Garnish with parsley and serve.
