A small amount of steam is used during the cooking process to keep the berries moist while a high cooking temperature allows for a crispy crust.

Fresh Strawberries (cut in halves)
1 cup
Fresh Blueberries
1 cup
Fresh Blackberries
1 cup
Fresh Raspberries

Cornstarch

Turbinado Sugar

Pre-Made Pie Crust
Egg Wash (1 Large Egg and 1/2 Tablespoon of Milk Whisked Together)
Steps
1. Prep Berries
In a bowl add the cornstarch and one tablespoon of the sugar to the berries.
2. Combine Ingredients
Gently stir the berry mixture making sure that the berries are coated in the sugar and cornstarch.
3. Prepare Pie Crust
Line the Anova Oven pan with parchment paper. Roll out the pie crust on the Anova Oven pan.
4. Add Berry Mixture
Add the berry mixture to the pie crust. Do not add the juice from the bowl of berries to reduce the risk of a soggy pie crust. You can use a slotted spoon to help with this.
5. Fold Pie Edges
Gently fold the pie dough edges over the berry mixture.
6. Apply Egg Wash
Brush the folded pie crust edges with the egg wash mixture. Then sprinkle the remaining sugar on the folded pie crust edges.
7. Preheat Oven

Heat: Rear
8. Cook Galette
Rack
Cook 20 to 25 minutes. The longer you cook the galette it will cause the berries to burst.
