One Pot White Chicken Chili

Want a different kind of chili than your standard beef, beans, and tomato (we’ve got a recipe for that too!)? A white chicken chili is a great way to use your Anova Precision Oven to cook beans from scratch (if desired) and use sous vide mode for moist chicken. This recipe uses one dutch oven to cook everything. Just add the ingredients, shred the chicken after it meets probe temperature, add it back in with cream and you’re ready to hold it at temp or garnish and serve!

One Pot White Chicken Chili

Ingredients
1
Medium yellow onion, diced
2
Garlic cloves, minced
2.5 tsp
Cumin
1 tsp
Smoked paprika
2 tsp
Kosher salt

Chicken breasts, (about 1.75 pounds)
4 cups
Chicken stock
15.5 oz
Can of white beans, drained and rinsed
7 oz
Can of diced hatch chilies, drained
15.5 oz
Fire roasted corn, drained
Lime, cilantro, jalapeños, sour cream and shredded cheese to serve
Steps

1. Preheat

Rack
Sous Vide Mode: On
Steam: 100%
Temp: 164°F
Heat: Rear

2. Add alliums and spices

In a large dutch oven, add onions and garlic along with spices.

3. Add canned ingredients

Add chilies and beans (if making beans from dry, refer to the beans 101 recipe, then add at this time once cooked).

4. Add chicken stock

Pour in stock.
Add chicken stock

5. Probe chicken

Probe one of the chicken breasts and add all chicken to dutch oven.

6. Cook chicken

Rack
Cook until probe reaches 160 F.
Sous Vide Mode: On
Steam: 100%
Temp: 164°F
Heat: Rear

7. Remove chicken and shred

Remove chicken breast with tongs and place in the bowl of a stand mixer fitted with a paddle attachment. Turn on low for one minute until shredded. Return to pot with other ingredients.

8. Add cream

Pour cream in and stir.
Add cream

9. Add toppings and serve

Before adding toppings, return to oven to hold temp or spoon into bowls and top with ingredients.
