The Anova Precision Cooker can help you achieve perfect hard-boiled eggs with creamy yolks and tender whites every time. You can even cook as many eggs as you’d like at once without adjusting the settings. Notes: This recipe works best when there’s some airflow underneath the eggs. The photos in this recipe show a perforated pan, which is now available to order through Anova. If you don't have one, placing a wire rack over a sheet pan works as a substitute. At 100% steam, eggs will get a creamy center in 15 minutes. For a more traditional hard-cooked yolk, cook the eggs for 17 minutes. Start the timer immediately after placing the eggs in the oven.

Ingredients
Large eggs, directly from the fridge
Steps

1. Preheat the Oven

Rack
Sous Vide Mode: Off
Steam: 100%
Temp: 212°F
Heat: Rear

2. Place Eggs on Pan

Add as many eggs as desired in a single layer to a perforated pan (see note).

3. Cook

Rack
Transfer to the oven and cook until the eggs reach your desired doneness, 15 to 17 minutes (see note). Make sure to turn on the timer immediately after placing the eggs in the oven. While the eggs cook, fill a large bowl with ice water.

4. Chill

Immediately transfer the cooked eggs to the prepared ice bath and let sit for 15 minutes.

5. Peel

If using eggs immediately, peel. (It can help to peel the eggs under cool running water in the sink.) If saving for later, transfer the eggs, still in the shell, to an airtight container and refrigerate.

Eat as-is, or use for egg salad or deviled eggs.
